babashka supports add-watch on vars since the last version (previous versions only supported it on atoms and refs)

It has its own interesting side effects. That's how I ended up getting more exposure to infrastructure, as in I'd rather work with infra and learn bash and play all that yak shaving jazz most days than waste my time with Java/TypeScript/etc. Not as enjoyable as 100% Clojure, but I'm glad it happened 🤓
