I'd like to again bump https://github.com/pedestal/pedestal/issues/666 Currently, it is impossible to parse any log generated by pedestal.log without parsing EDN. Most of cloud providers and monitoring tools give us tools to parse logging. None (maybe 1 or 2?!) support edn parsing. This is a real blocking to use pedestal logging in cloud environment.

This is certainly on our radar, not least because we could use this behavior at NuBank as well!
