I've also seen hints about Pedestal2, but I don't think the development is public

iirc, "Pedestal2" came up when ring-2 was about to be released and there was a discussion on performance and a mention comparing it with Pedestal2

Pedestal is being maintained but the pace of change has slowed because we’re currently in maintenance mode. I’ve not been actively checking this channel as of late, though.
