Open question - what are the ways folks know of for the designing of a book to be published? I have all the content already it's just not in (or designed for) a physical format Ideally I'd like to insert some of my hand drawn illustrations as well. I'm just a bit of an idiot I think when it comes to design tools

To be published in which form? And what kind of content? You could look into Clay/Quarto, if it's about Clojure programming.

Typst is nice for typesetting. It has similar power to latex but in a package that is much easier to learn and use.

Published into a physical book to be sold in stores

And it's not about clojure programming

Typst being a site I pay and sign up for isn't appealing solely because what if that business fails?

Not against paying for software but I don't want to rely on subscriptions

Latex would be an option or anything that produces PDF. https://www.scribus.net/ for example. But I don't have any personal experience with it.

Typst is also a single-binary compiler from text source to PDF. They just don't advertise their open source nature very much on the site, but look here: https://github.com/typst/typst

I don't want a subscription software for writing, for the same reasons as you.

I have resisted subscription based writing tool over the years, but eventually gave in and bought Ulysses. I used to write everything in Ulysses years ago, before it was turned into a sub, and tried many henceforth, but Ulysses just works for me.

I use pandoc for a lot of work, https://pandoc.org/. That might help you.

A lot of templates exist. I published a book once, giving mini-course lectures on LaTeX itself

I found Scribus pleasant for Desk-Top Publishing jobs (things I typeset myself), including a small magazine and a full-length book. Both with pictures and graphics. https://www.scribus.net/ I feel it is more accessible than InDesign or similar DTP packages.

I've tried using scribus but I feel like I need a two-week course on it

Doesn't mean the software is bad, it's the human hardware

But I don't know how to get over that hump

I am looking more into typst. At a certain point I need to figure out if my issues are related to lack of clear conception in my brain of how I want this to look or lack of ability to make the tool do what I want
