Could just be me, but I find thick PBT keycaps to be quieter than cheap ABS keycaps (like the Quickfire comes with)

Yeah, I think the frame is really important too. I myself have the hhkb type-s (for silent..) but it's not that silent tbh.

I’ve got Cherry MX Clears in my Atreus, and I don’t think they’re that loud. But my daily-driver for work is a Happy Hackign and so that’s my baseline (not comparing to laptop membrance-type keyboards)

Well my colleagues never complained about it in an open office even. But the macbook scissor switches sure are more silent than any other mechanical type.

The Matias Ergo Pro is fairly similar to Ergo Dox (missing thumb clusters that the Ergo Dox has, but it is split and has tenting, which is an advantage) but the keys are quite quiet: https://www.youtube.com/watch?v=iUX_f3RiQME

They’re pricey, but not by custom mechanical keyboard metrics (just compared to grabbing a Logitech or M$ keyboard from Best Buy)

I didn't have any problems with the non-staggered and different thumb layout, because I decided to switch from qwerty to colemak when I got them. Which funnily enough made me still type qwerty well on staggered keyboards.

When my ergodox died I switched back to qwerty for a while, now I am back at colemak I can't type qwerty anymore, except on my phones display keyboard..

Hmm, not that I'm aware of. I bought it pre-assembled by someone else, maybe it's a really easy fix.
