seancorfield/depstar {:mvn/version "0.3.1"} was just released -- includes a new -m / --main option so that if you have a pom.xml and do your own AOT/compile step to create a "main" entry point, you can now override the Main-Class in the generated manifest (overriding the default of clojure.main).
