Is #remote-jobs adequate if I want to seek peers for a less-formal setting? Think a 'co-founder' but no salary or defined equity structure - I just want to hack something together and formalize things later if it sticks

Agreed. #off-topic is probably better since it isn't really a "job" in the common sense of the word. Good luck, and hoping it turns into real jobs!
