Really happy about the focus on building better documentation for Pedestal. I love the architecture and the idea of interceptors but it's been a bit of a hard sell at times because of the limited material to quickly learn and later debug things.

Let me know what else should be in them. There are quite a few placeholders right now, but I'm sure there are gaps that I don't even have placeholders for.
