there was a dope talk at Strange Loop @mattly from a guy who used Overtone to do Indian classical music, i.e. ragas — he started with direct MIDI/frequency correlation but added variation patterns to emulate the way ragas will sort of move around the note’s frequency

right I mean there's all sorts of ways to come up with note patterns and scales

for what it's worth, I posted on soundcloud a set I did last spring using Overtone https://soundcloud.com/hlolli/raflost-2018-hlover-sigursson not extreamly proud of it (gets better in the middle), but Overtone can still rock if used correctly 😉
