Has anybody messed with the witchcraft-workshp setup stuff to get it in a docker image?

Don't think so. This has been discussed elsewhere at length but there's usually limited benefit of having jvm dev stuff wrapped in a container.

I'm also not sure if it would violate the Mojang ToS or not.
