I have asked a couple of companies and even recruiters how many applicants they got for a position. Only when I made it to the final rounds did they even bother to disclose. One company had 1500 applicants for one open role last Fall. But most of the time they don't even reply. I'm curious, I wonder why they don't?

It's not a question many candidates ask, to be honest, and I suspect the people you're talking to during the interview process may not get to see the overall picture and may not actually know how many applicants in total there are, only how many they see from their point. As for recruiters, I suspect they view that as a somewhat confidential issue with their client.
When we were hiring for a JS role a year or two back, I got to see 100+ resumes, but I think HR saw close to 1,000 applicants as I recall (at one point, they confirmed 700 applicants and new ones were still coming in).
I'd expect that almost any mainstream tech job is going to get 500-1,000 applications, even at a small company (like ours), and many more at large companies. More niche tech jobs will get fewer applications.
Ah, makes sense, they might not actually know. Yeah it was only later on in the process that I was able to ask someone high enough up to get a clear answer in the one case
