I think one question that worked really well with me is "Supposed I'm an employee already, how does a typical day on work looks like?". This usually boils down to "Pick a ticket from <system> and then..." but it works as a way to know if there are too many meetings, or too few, if people pair a lot, not at all, usually, etc. Extrapolate to "a typical week" to know how people organize things, deploys, etc 🙂
