Hrm. Which makes sense for converting *foo* /bar/ from org-mode to HTML: <b>foo</b> <i>bar</i> or <strong>foo</strong> <em>bar</em>? (I'm working on improving organum with inline parsing and output rendering capabilities)

Maybe not what you are asking at all, but just throw a class around it and define it in the CSS later on?
